I’m not sure if this post will be helpful (I’m a noob with Apple software…) but here is a little something for other noobs like me! 
I use other software to convert video files to be used in my iTouch. Little did I know that iTunes already has its own converting mechanism! So here are the steps to do so:
1) Add the video file to the Movies folder.
2) Select the video you want to convert.
3) Go to the Advanced menu tab, and select “Create iPod or iPhone version”.
And that’s it.
